Blackcurrant Mead

🥘 Ingredients

  • blackcurrant juice
    3 l
  • honey
    6 kg
  • pectolase
    5 tsp
  • sweetner
  • water
    10 l
  • yeast
  • yeast nutrients
    3 caps

    You'll want a good source of honey for meadmaking but you don't need an expensive one. As long as it's real honey, it tastes good and you can buy it in bulk you should be fine.

    Sterilise your fermenter and add boiling water . Add honey and keep stiring till it's all dissolved (This also helps areate the ferment which helps the yeast).

    Add blackcurrant juice and enough water to bring up to the 20L mark. Mix and take a hydrometer reading and leave to cool.

    Once the must is below 30C add pectolase , yeast nutrients and yeast to the fermenter. Add a peice of clean copper to the fermenter to prevent sulpher compounds.

    Once fermentation has finished and sediment has fallen out, syphon off the sediment into a keg. Add sweetner to taste then add enough white sugar to carbonate the keg.
